INGREDIENTS

1 cups dried elderberries (Sambucus nigra)

1/4 cup schisandra berries

1 small piece fresh ginger

2 whole cinnamon sticks (optional)

5 whole cloves (optional)

4 peppercorns

6 cups water

2 cups raw honey

Yields: About 6 cups

INSTRUCTIONS

Place all ingredients in a pot. I prefer a stainless steel pot. Simmer slowly, stirring often so it does not scald. Let simmer 40 minutes. Strain out the syrup so that the solid pieces are left behind. Label the bottle and refrigerate. This keeps in the refrigerator for up to 6 months.

*Optional  items are great for flavor as elderberries do not have the best taste, in my opinion.

*Peppercorns are often used in Ayurvedic and Traditional Chinese Medicine as a catalyst.
